Pavbhaji – Pav Bhaji masala
Ingredients:
- 3 medium-sized potatoes, boiled and mashed
- 1 cup cauliflower florets, finely chopped
- 1 cup green peas
- 1 large onion, finely chopped
- 2 medium tomatoes, finely chopped
- 1 bell pepper (capsicum), finely chopped
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2-3 green chilies, finely chopped (adjust according to taste)
- 2 tablespoons butter
- 2 tablespoons oil
- 2 tablespoons Kesar Gold Pav Bhaji Masala
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- Salt to taste
- Fresh coriander leaves, chopped for garnish
- Lemon wedges for serving
- Pav (Indian bread rolls), lightly toasted with butter
Instructions:
- Heat oil and butter in a pan or kadhai over medium heat.
- Add minced garlic and grated ginger. Sauté until they turn golden brown.
- Add chopped onions and green chilies. Sauté until onions turn translucent.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add chopped bell pepper (capsicum) and cook for another 2-3 minutes.
- Add cauliflower florets and green peas. Mix well.
- Add Kesar Gold Pav Bhaji Masala, red chili powder, turmeric powder, and salt. Mix all the spices with the vegetables.
- Mash the vegetables using a potato masher or back of a spoon. Keep mashing until all the vegetables are well combined and you get a uniform mixture.
- Add boiled and mashed potatoes to the pan. Mix well with the vegetable mixture.
- Add a little water if the mixture is too dry. Let it simmer for 5-10 minutes on low heat, stirring occasionally.
- Once the pav bhaji is cooked and reaches a thick consistency, turn off the heat.
- Garnish with freshly chopped coriander leaves.
- Serve hot with lightly toasted buttered pav (bread rolls) and lemon wedges on the side.
